In a large pot saute chopped onion in oil until translucent then add garlic and saute for 2 minutes.

Then add the chicken broth, water, and tomatoes and bring to a boil.

Add tortellini and return to a boil. Cook for 5-8 minutes, stirring occasionally.

Reduce heat and add spinach, seasoning and pepper. Cook another 3 minutes.

Serve topped with cheese.
