Tortellini Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 medium chopped onion
  • 3-4 cloves of minced garlic
  • 2 boxes 16 oz each reduced-sodium chicken broth
  • 1 1/2 cup of water
  • 1 can 14 1/2 oz diced tomatoes
  • 2 packages 9 oz cheese tortellini (refrigerated or frozen)
  • 2 cups frozen chopped spinach
  • 1 tablespoon Italian seasoning
  • 1/4 teaspoon black pepper
  • Shredded Parmesan optional

Instructions

  1. In a large pot saute chopped onion in oil until translucent then add garlic and saute for 2 minutes.
  2. Then add the chicken broth, water, and tomatoes and bring to a boil.
  3. Add tortellini and return to a boil. Cook for 5-8 minutes, stirring occasionally.
  4. Reduce heat and add spinach, seasoning and pepper. Cook another 3 minutes.
  5. Serve topped with cheese.
