I love a quick and easy for lunch. It’s easy to get into a rut of eating the same, easy to make lunches, especially when you are busy. I’ve found a way to insure I eat a healthy lunch is to have a plan. Recently I planned out a series of dinners that could easily convert all or part of it’s leftovers into an epic salad the next day. I will be sharing that post soon but through that week I learned that I making it easy is the key to success. Maybe it’s not that you don’t like salad, it’s that you don’t like bad salads. A good salad with a lot of high quality and delicious ingredients can make or break a salad.
This salad is super easy because I use some pre-made and easy to prepare items for a quick, throw-it-together salad. The key to this salad is Trader Joe’s Balsamic Grilled Chicken Breasts. Prepared meats make adding protein to any salad a breeze. If you don’t have access to a Trader Joe’s I know a lot of grocery stores sell pre-grilled chicken in the refrigerator section, this is a great alternative.
Ingredients
- 1 sliced chicken breast (Trader Joe’s Balsamic Grilled Chicken Breast)
- 4 cups salad greens (or more)
- 1/2 cup sliced cucumber
- 1 sliced peach
- a few cherry or grape tomatoes
- 1/4 cup chopped pecans
- 2tbs balsamic vinaigrette
- 2tbs cup goat cheese (optional)
Directions
Since you’re already using pre-grilled chicken all you need to do is assemble your salad, top with dressing and enjoy

Balsamic Chicken and Peach Salad
Ingredients
