I love a good dip/salsa to go along with my tortilla chips. A friend introduced this recipe to me years ago and over time I’ve gradually adapted it to my tastes. It’s great for potlucks, parties, game days, and more. I could probably eat the entire bowl of salsa for a meal… I mean it’s that good!
I recently served this at our Super Bowl night and there were no leftovers, even the kids devoured it. *We didn’t actually watch much of the game because we were all too busy eating this salsa and Joe’s amazing wings.
Black Bean Avocado Corn Salsa
- 1 large avocado, diced
- 1 can black beans, drained
- 1 cup corn (Trader Joe's Roasted Corn, thawed)
- 1/2 cup red onion, diced
- 1 large tomato, diced
- 1/4 cup cilantro, chopped
- 1/4 cup lime juice
- 1 tsp salt
- 1/2 tsp black pepper
- 1 jalapeno, seeded and minced (optional)
Mix black beans, corn, tomatoes, cilantro, red onion, jalapeno (optional), lime juice, salt, and black pepper in a bowl; fold avocado into the mixture. Cover bowl with plastic wrap, chill at least 2 hours.
