Carne Asada Rice Bowl

Since we are home a lot (Joe works from home, and I stay home with Abel during the day), I do a lot of cooking. I try to find ways to switch up our meals and how to make each ingredient from meals stretch their farthest. Last weekend Joe grilled Trader Joe’s Carne Asada. (I’ve you’ve never tried Trader Joe’s Carne Asada you should, because it’s awesome. We love tacos, burritos, enchiladas, etc… but sometimes I want fewer tortillas in my life.

Well, the following day we need a simple lunch option so I threw together Carne Asada rice bowls.

Trader Joe’s Carne Asada Rice Bowls

Carne Asada Rice Bowl

Total Time 20 minutes
Servings 2

Ingredients

  • Grilled Carne Asada leftover
  • 1 cup uncooked rice
  • 1 can black beans
  • 1 tsp cinnamon
  • 1 tsp mild green jalapeno hot sauce
  • 1 cup cherry tomatoes cut in quarters
  • 1/2 cup sliced red pepper
  • 1 cup shredded cheese
  • 1/2 avocado

Instructions

  1. Reheat the Carne Asada (I heat mine in a glass dish covered with foil in the oven at 350 degrees for 20 minutes.)
  2. Cook rice according to package
  3. Cook beans, cinnamon and hot sauce in sauce pan on medium low heat
  4. Prepare other ingredients
  5. Layer ingredients in bowl and enjoy
  6. Optional: top with cilantro
