Flatbread Tuna Melt with Bacon and Avocado

In high school, I used to bring tuna salad and crackers for lunch almost every day. It was kind of my thing. I love a good tuna salad sandwich but somehow I went almost 20 years before I had a tuna melt. I know what you’re thinking, how is that possible? I have no idea but ever since that first taste I knew it was meant to be. I and tuna melt BFF.

Well since that first melt, over 10 years ago, I have been trying to create the ULTIMATE TUNA MELT, and well folks, I think I’ve done it.

Tuna Salad
Bacon
Tomato
Cheddar Cheese
Avocado
all toasted in a soft Flatout Foldit

It’s like a little piece of heaven has entered the earth, fallen on my plate, traveled down my esophagus, and filled my belly with all of its goodness. Or something like that.

Tuna Melt Bacon Avocado

Basically, I took my favorite grilled cheese sandwich recipe and added tuna salad and BAM! Awesomeness.

Ultimate Tuna Melt

Ingredients

Tuna Salad

  • 1 pouch Starkist Tuna Creations Herb & Garlic
  • 1/8 cup diced celery
  • 1/8 cup diced red pepper
  • 2 TBS Mayonnaise

Sandwich

  • Tuna Salad (recipe above)
  • 1 Flatout FoldIt Flatbread
  • 1 slice of cooked bacon
  • 1 slice tomato
  • 3-4 slices avocado
  • 1 slice of cheddar cheese

Directions

  1. Mix together Tuna Salad ingredients in a bowl
  2. Preheat the Panini press or sandwich press or Foreman grill or whatever.
  3. Assemble your sandwich on the Flatout FoldIt – I layered mine like this: Tuna, tomato, cheese, bacon, and avocado.
  4. Grill that sandwich
  5. Eat that sandwich

So simple. So delicious.

Bacon Avocado Tuna Melt

Ingredients

  • 1 pouch or can of tuna
  • 1/8 cup diced celery
  • 1/8 cup diced red pepper
  • 2 TBS mayonnaise
  • 1 flatbread
  • 1 slice of cooked bacon
  • 1 slice tomato
  • 3-4 slices avocado
  • 1 slice of cheddar cheese

Instructions

  1. In a bowl, mix the tuna, mayonnaise, red pepper, and celery

  2. Preheat the Panini press or sandwich press

  3. Add the tuna, tomato, cheese, bacon, and avocado to one side of your flatbread. Fold it in half.
  4. Frill the sandwich 2-3 minutes
