My boys love sweet potatoes and I love loaded baked potatoes so I decided to get creative and create a stuffed sweet potato we all would enjoy.
This is a couscous, black bean and feta cheese stuffed sweet potato and it is oh so delicious.
It takes a little while to cook but it’s relatively simple.

Vegetarian Entree of Sweet Potatoes, Black Beans, Couscous and Feta Cheese.
Ingredients
- 2 Sweet Potatoes
- 1 Can of Black Beans
- 1 Cup Cooked Couscous
- 1/2 Cup Feta Cheese
- 1/2 tsp Cinnamon
- 1/2 tsp Green Jalapeno Sauce
Instructions
- Preheat Oven to 400 degrees
- Bake Sweet Potatoes for about 45 minutes or until tender
- Meanwhile in a medium sauce pan mix together Black Beans, Cinnamon, and Green Jalapeno Sauce, let simmer on low.
- Cook Couscous according to directions
- Mix together drained Bean mixture and couscous.
- Once Sweet Potatoes is cooked slice open and fill with bean/couscous mixture
- Top with feta cheese
What an interesting flavor combo I would not have thought about but am eager to try! Plus, I’m always on the hunt for yummy veggie selections for my young adult daughter who turned away from meat about a year ago.
We try to have at least 1 vegetarian meal a week and since my kids love sweet potatoes we often do some form of stuffed sweet potato.
Hey Jess! You can cut your time in half if you microwave the potatoes first instead of using the oven to bake them. Cook them for about 10 minutes. You may even have a baked potato option on the microwave. When I discovered this I was soo happy bc I hate baking potatoes but I love to eat them 🙂 Your recipe sounds delicious though! I don’t notice a taste difference 🙂
Yeah a microwave would expedite the process but we don’t own a microwave (by choice).
