This a very simple recipe and doesn’t require much work from the cook but it is a time intensive meal due to the marinate and cook times. But trust me, it’s definitely worth it!
Cook on Low for 8 hours
When there are about 2 hours left on the slow cooker cut sweet peppers and mix with 1/4 cup Dressing
The pork should just fall away from the bone, it’s wonderful. Both Joe and I were delighted with how this recipe turned out, even Jude (our three year old) loved it. We served the pork with white rice and a simple salad topped with the same Tonton Ginger Dressing. We will certainly be making this dish again!
Almost all of the ingredients can be found at Costco (except the scallions). The Thai BBQ Rack of Pork is not only delicious it looks pretty impressive too. Dinner guests will think you slaved over the stove creating such a beautiful and succulent dish. Because you are cooking the main dish in a slow cooker it affords you more time to prep for other dinner party details like perfecting your Thai Iced Tea recipe or arranging a beautiful centerpiece.
