Slow Cooker Thai BBQ Rack of Pork #CostcoPork

Joe LOVES Thai food and I LOVE my slow cooker so we combined our favorites and created this delicious Thai BBQ Rack of Pork recipe. Thai BBQ Rack of Pork is show stopping meal and is perfect to serve at a dinner party. It tastes amazing and looks way more difficult than it is to actually make.

This a very simple recipe and doesn’t require much work from the cook but it is a time intensive meal due to the marinate and cook times. But trust me, it’s definitely worth it!


Prep Time: 10-15 min
Marinade Time: 12 – 24 hours
Cook Time: 8 hours

Marinade Ingredients

Rack of Pork 
1 can (12 fl oz) Pineapple Orange Frozen Juice Concentrate
1/2 cup – Peanut Butter (we used creamy but crunchy will also work)
1/4 cup – Ginger Dressing (we used Tonton Ginger Dressing available at Costco)
1/2 cup – Soy Sauce
1/4 cup – Honey
2-3 cloves pressed Garlic

Ingredients for slow cooker
1/2 cup – Tonton ginger dressing
2 cups – chopped Mild Sweet Peppers
1/4 cup – Tonton Ginger Dressing
Scallions to garnish

Marinade Directions:
Mix all marinade ingredients in blender, except the Pork, until smooth.
Pour marinade over the rack of pork and refrigerate for at least 12 hours. (24 hours is ideal but 12 is fine. We place ours in a large plastic zipper bag.)

Cooking Directions:

Remove rack of pork from marinade and place in slow cooker
Discard marinade
Add 1/2 cup of Ginger Dressing atop the pork 

Cook on Low for 8 hours

When there are about 2 hours left on the slow cooker cut sweet peppers and mix with 1/4 cup Dressing

Add pepper and dressing mix to the slow cooker
Once the pork is done remove it from the slow cooker along with all of the cooked peppers.
Top with chopped scallions

The pork should just fall away from the bone, it’s wonderful. Both Joe and I were delighted with how this recipe turned out, even Jude (our three year old) loved it. We served the pork with white rice and a simple salad topped with the same Tonton Ginger Dressing. We will certainly be making this dish again!

Almost all of the ingredients can be found at Costco (except the scallions). The Thai BBQ Rack of Pork is not only delicious it looks pretty impressive too. Dinner guests will think you slaved over the stove creating such a beautiful and succulent dish. Because you are cooking the main dish in a slow cooker it affords you more time to prep for other dinner party details like perfecting your Thai Iced Tea recipe or arranging a beautiful centerpiece.
