Chocolate Chip Pumpkin Muffins

When everyone is heading to the coffee shop to get their pumpkin spice latte, I’m at home making my pumpkin spice muffins. (Primarily because I don’t drink coffee… I know, I know) But, everyone I know who makes and tries these muffins can attest to how delicious they are. Not only are they delicious but they are super simple to make. They only have 3 ingredients, so how hard can it be.

The key to make these is to mix the pumpkin and cake mix together very well. At first you may think, I need more liquid in this mix but just keep mixing. The pumpkin does all the work here. These are so easy to make my toddlers helped me make these.

Ingredients:
Boxed Spice Cake Mix
1 Can Pumpkin
Chocolate Chips (as many as desired)

Instructions:
Preheat oven to 350 degrees.
Mix together Cake Mix and Pumpkin in a bowl until well blended.
Stir in Chocolate Chips
Divide evenly among lined (or oiled) muffin tins.
Bake for 20-25 min
Let cool and enjoy!

What I love about this recipe is they are super easy to switch up. You can use a yellow or chocolate cake mix if you don’t like the spice. You can omit the chocolate chips or add nuts. There are so many possibilities.
