To say I love chocolate would be an understatement, I adore it. But I’m also a little picky about the chocolate I eat, not expensive picky just taste. (Good chocolate doesn’t have to be expensive, although expensive chocolate is usually pretty good.) I digress….
Now that it’s fall it’s pumpkin season. I don’t really like pumpkin pie. (I know, I know how can I anyone not like pumpkin pie? Well, I don’t. So there.) However, I do like pumpkin muffins, specifically chocolate chip pumpkin muffins. So I thought I’d take it once step further and make Chocolate, Chocolate Chip Pumpkin Muffins!
They turned out pretty good, I think I like my regular pumpkin muffins better. But Jude really seems to love the double Chocolate!
Here is the recipe. It’s super simple!
I mean so easy my 3 year old helps me make it.
Ingredients:
Chocolate Cake Mix
1 Can Pumpkin
Chocolate Chips (as many as desired)
Instructions:
Preheat oven to 350 degrees.
Mix together Cake Mix and Pumpkin in a bowl until well blended.
Stir in Chocolate Chips
Divide evenly among lined (or oiled) muffin tins.
Bake for 20-25 min
Let cool and enjoy!
Pumpkin muffins made with a Yellow Cake Mix
See, I told you it was simple. You can change up the recipe by using different cake mixes. If you want a more festive flavor use a Spice Cake Mix. I often use a Yellow Cake Mix which is my favorite. You could also add in other ingredients like dried cranberries or nuts.
