Vanilla Frozen Custard Recipe

Joe’s parents bought us an ice cream maker for our wedding and until a few weeks ago we never used it, primarily because we didn’t know how. So one day we decided to try it out… we followed the instructions that came with the maker to the “t”. However, we ended up with warm milk and scrambled eggs! So a few days later we mustered up the courage to try again however we wisely decided to forgo the enclosed instructions and use the recipe Joe’s mom gave us. Fortunately, we finally found success!

Vanilla Frozen Custard


Ingredients:
1 Quart Milk
1 Quart Half & Half
5 Eggs
2 Cups Sugar
2 Tbs. Flour
1/2 Pint Whipping Creme
1 Tsp. Vanilla

Step 1 Combine 1 Quart Milk with 1 Quart Half & Half in a double broiler and scald. (do not boil)
Step 2 Beat together eggs, sugar, and flour
Step 3 Temper the eggs and slowly add egg mixture to the milk mixture and cook for 25 minutes, stirring occasionally.
Step 4 Pour into a large bowl, cover with wax paper, and cool.
Step 5 When ready to freeze add whipping cream creme and vanilla.
Step 6 Freeze and Pack

Frozen Custard vs. Ice Cream

Both frozen custard and ice cream are made with the same primary ingredients: milk, cream, and sugar. Frozen custard has one additional ingredient, eggs. The addition of eggs makes for a luxuriously creamy texture.

Additionally, Ice Cream is usually churned to incorporate more air to make it light and airy.

  • 1 quart milk

  • 2 TBS all purpose flour
  • 1/2 pint whipping cream
  • 1 TBS vanilla

Instructions

  1. Combine 1 Quart Milk with 1 Quart Half & Half in a double broiler and scald. (do not boil)

  2. Beat together eggs, sugar and flour

  3. Slowly add egg mixture to milk mixture, stiring constantl. Cook 25 minutes, stirring occasionally.

  4. Pour into a large bowl, cover with wax paper and cool.

  5. When ready to freeze add whipping cream creme and vanilla.

  6. Add mixture to ice cream maker and churn according to the ice cream maker's instructions.

  7. Pack churned ice cream into a seal able contain and freeze until firm.
