Monday Meal Plan – Going Pinterest Crazy

I’ve found several recipes on Pinterest that I want to try this week (and next). I have a few recipes I plan on altering and will then post the recipes if they turn out.

Monday – Mother/Son Date night with Jude
Tuesday – Roasted Brussels Sprouts and Barley
Wednesday – Mini Tacos
Thursday – Slow Cooker Peppers and Steak
Friday – Quinoa Chicken and Bacon Wrapped Asparagus
Saturday – Veggie Spaghetti
Sunday – Orzo with Corn, Zuchinni and Spinach

The orzo recipe planned for Sunday reminds me of an orzo recipe some friend brought us after Jude was born. Now I need to look it up because it was delicious and I want to share it with you all.

Last week was a busy week but this week we have very little on our calendar, which is good because I feel like I might be getting sick.

We are still trying to eat a lot of paleo meals with small amounts of carbohydrates on occasion. I’m excited to try out spaghetti noodles made from quinoa, the boys love spaghetti so it’s hard to give up noodles. We are looking for healthy alternatives that are still basically a noodle and adding a salad to make sure we get lots of veggies.

Monday – Chicken with bacon wrapped asparagus
Tuesday – Cuban
Wednesday – Quinoa spaghetti with meat sauce and side salad
Thursday – Chicken fajitas
Friday – Make your own pizza night
Saturday – Paleo Bean-less Chicken Chili
Sunday – London broil with baked sweet potatoes

Since Joe gets paid every two weeks we try to do 1 big grocery tip after pay day and then a small refresher trip at the beginning of week 2. While we are trying to eat healthfully we also can’t afford to break the bank.

This is week 2 so before we headed out to the store we took inventory of what we had left and what we needed to make meals this week without going over our food budget.

weekly meal plan It’s Valentine’s Week! We don’t usually go out on Valentine’s Day because it’s always so crowded, we prefer to eat a nice romantic dinner at home.

Wednesday – BBQ Chicken with Sweet Potato Slices

Thursday – Valentine’s Day Cuban

Friday – Breakfast for Dinner

Harris Teeter Triples Brag

So last week was triples at Harris Teeter and it took everything in me to make it to the store and actually have my stuff together. I’d gotten so far behind on clipping and organizing my coupons that it just didn’t seem worth it. However, we seriously needed groceries and as always the budget was tight. So I hunkered down and in got everything together. Granted I didn’t put as much planning effort into matching the sales with coupons. Just getting all of the coupons organized what a small victory and was good enough for me.
