Whole30 Preview Day – What We Ate

Rather than start our Whole30 challenge on a Tuesday (since Jan 1 is a Tuesday) I opted to do a trial day on Monday. All of our meals were Paleo however we still had a few non-Paleo snacks, especially as we celebrated the new year. (ie hot chocolate and candy)

Here’s what we ate on Monday:

Breakfast: 2 hard boiled eggs and kiwi. I didn’t get a picture because I was too busy burning the bacon. 🙁

One of our biggest breakfast challenges is that Joe doesn’t eat eggs, like ever, he has a conceptual issue about eating them. I, however, still eat eggs and just leave him to fend for himself.

Lunch: Avocado Chicken Salad, Kale Chips, Dried Okra and a Clementine

The Chicken Salad was a huge hit. I will post the recipe soon!

No one really cared for the kale chips, it was my first time making them so I may adjust the recipe and try again.

Dinner: Barbacoa and Peas

Barbacoa is one of our favorites and so easy to make, this meal was a big success especially for Noah he loved the avocado and peas!

I was pleasantly surprised at how little I actually craved snacks after eating these meals. I think the key is to eat plenty of protein. I know my biggest challenge will be giving up all of the sugar, I have a serious addiction to chocolate!

The boys aren’t 100% participating in the Whole30 challenge. However, they are eating all of the same meals I make with little exception.

One of the main reasons I decided to try the Paleo diet is because when I had the flu I cut out most of the non-Paleo friendly foods and immediately noticed a difference in the way I felt. I am 100% convinced that many of our health issues are related to our diet. Thankfully I don’t have many health issues, aside from a few extra pounds, but I hope to avoid any future health problems by maintaining a clean diet.

Today officially starts our full Whole30 Challenge, here goes nothing! Check out my Whole30 Meal Plan for week 1.
